I took the base recipe from here: https://www.allrecipes.com/recipe/7906/chocolate-chip-muffins/
I tinkered a little. Comments suggested more milk so I used a full cup, and cut up a little too much chocolate, so I put in a cup there. I think when I make them again I’ll add some vanilla too. This is what I used:
2 cups all-purpose flour
1/2 cup white sugar
3 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
1/3 cup vegetable oil
1 egg
1 cup mini semi-sweet chocolate chips
1. Combine flour, 1/2 cup sugar, baking powder, chocolate chips, and salt; mix well.
2. In a small bowl, combine milk, oil and egg; blend well. Add to dry ingredients all at once; stir just until dry ingredients are moistened.
I didn’t add the sugar mix topping that the recipe asked for, because it seemed sweet enough.
The recipe calls for muffin cups, baking for 20-25 minutes at 205C. I have just a little convection oven. though, so I plopped it all in a cake pan and baked at 200C for about 40 minutes.
