My students carved pumpkins this year and, as every year, I thought it was wasteful to send it all to the garbage, so I rescued a couple.
Even though they were small, It took the morning to process them. The seeds are going to another teacher, as I’m not a big fan of pumpkin seeds in shell. It left me with a conundrum, as I have never in my life cooked with pumpkin before.
I froze some, and will try a puree when I have a food processor, as I’d like to try pumpkin loaf or muffins. the remainder went into a chicken and pumpkin stew. After a tentative nibble, I declare it delicious.
